Neapolitan Cookies Recipe
Ingredients
• Vanilla Layer:
• 1/2 cup unsalted butter, softened
• 1/2 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1 1/2 cups all-purpose flour
• 1/4 teaspoon salt
• Chocolate Layer:
• 1/2 cup unsalted butter, softened
• 1/2 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1 1/4 cups all-purpose flour
• 1/4 cup unsweetened cocoa powder
• 1/4 teaspoon salt
• Strawberry Layer:
• 1/2 cup unsalted butter, softened
• 1/2 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1 1/2 cups all-purpose flour
• 1/4 teaspoon salt
• 2 tablespoons strawberry gelatin powder (or 1/4 cup freeze-dried strawberry powder)
Instructions
1. Prepare the Vanilla Layer:
1. In a mixing bowl, cream together the butter and sugar until light and fluffy.
2. Add the egg and vanilla extract, and mix until well combined.
3. Gradually add the flour and salt, mixing until a dough forms.
4. Set the dough aside.
2. Prepare the Chocolate Layer:
1. In a separate mixing bowl, cream together the butter and sugar until light and fluffy.
2. Add the egg and vanilla extract, and mix until well combined.
3. Gradually add the flour, cocoa powder, and salt, mixing until a dough forms.
4. Set the dough aside.
3. Prepare the Strawberry Layer:
1. In another mixing bowl, cream together the butter and sugar until light and fluffy.
2. Add the egg and vanilla extract, and mix until well combined.
3. Gradually add the flour, salt, and strawberry gelatin powder (or freeze-dried strawberry powder), mixing until a dough forms.
4. Set the dough aside.
4. Assemble the Cookies:
1. On a lightly floured surface, roll out each dough separately into a rectangle, about 1/4 inch thick.
2. Place the strawberry dough on a sheet of parchment paper. Lay the vanilla dough on top, and then the chocolate dough on top of the vanilla.
3. Gently press the layers together and trim the edges to make a neat rectangle.
4. Roll the stacked dough into a log, wrap it in plastic wrap, and refrigerate for at least 2 hours, or until firm.
5. Bake the Cookies:
1. Preheat the oven to 350°F (175°C).
2. Line baking sheets with parchment paper.
3. Slice the chilled dough log into 1/4 inch thick slices and place them on the prepared baking sheets.
4. Bake for 10-12 minutes, or until the edges are lightly golden.
5. Allow the cookies to cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
