Recipe of the Week  Japanese Spinach Salad Fresh, savoury, slightly sweet and ridiculously easy. Perfect alongside sushi, salmon, fried chicken or rice bowls. Ingredients • 1 large bunch spinach (about 250–300g) • 2 tbsp toasted sesame seeds • 1 tbsp soy sauce • 1 tbsp mirin • 1–2 tsp sugar • Tiny splash sesame oil (optional) Method 1. Toast the sesame seeds until fragrant. 2. Grind using a pestle and mortar. 3. Add soy sauce, mirin, sugar and sesame oil if using. 4. Boil the spinach for 30 seconds. 5. Drain, then immediately rinse with cold water. 6. Drain again and squeeze out ALL the water. 7. Roughly chop the spinach and pour over the dressing. Simple, delicious… happy days! Boil the potatoes til very soft and fry with onions, peas and spices. 2. Spread mango chutney over the puff pastry. 3. Spread the potato filling evenly. 4. Roll tightly and freeze for 20-30 minutes. 5. Slice thinly into wheels. 6. Egg wash and bake until golden. Perfect for snacks, hosting or an easy weekend treat. Leave to cool slightly.Press the rice evenly into a large tray or dish.In a bowl, mix the shredded crab sticks and prawns with mayo and sriracha.Spread the mixture over the rice.Sprinkle with sesame seeds and Japanese seasoning.Serve with nori, cucumber, avocado, sushi sauce, and crispy onions.Spoon onto nori, add toppings, wrap, and enjoy. Ingredients • Ready-made puff pastry • Mushrooms • Garlic • 1 onion • Salt + black pepper • Boursin cheese • Parmesan • Emmental cheese (or cheese of choice) • Truffle oil • 1 egg (for egg wash) Method 1. Fry garlic and onion. 2. Add the mushrooms, salt and pepper. 3. Lay out the ready-made puff pastry and lightly score the edges. 4. Brush the edges with egg wash. 5. Spread a generous layer of Boursin cheese over the pastry. 6. Once the mushrooms have cooled, add on top. 7. Sprinkle over Parmesan and a little extra Emmental (or your cheese of choice). 8. Bake at 180°C for around 20 minutes until golden. 9. Finish with a drizzle of truffle oil and serve with salad.
