    112: Beyond Fossil vs. Electric: Practical Stewardship in Everyday Life

    Most conversations about the environment fall into polarized camps — either denial or panic. But living responsibly doesn’t have to be political or extreme. In this episode, I take a practical look at what stewardship can look like at home, from how we grow food to how we build, heat, and maintain the spaces we live in.  For our family, that means raising chemical-free produce and livestock, managing soil through regenerative practices, and thinking about proximity so we can walk, bike, and rely less on cars. The result is healthier food, healthier soil and less dependence on the systems that created most of today’s environmental problems. We’ve learned that smaller and simpler often means smarter. A compact, well-insulated home cuts energy use and forces intentional living — less waste, less clutter, and fewer pointless purchases.  The same mindset applies to energy: we combine solar power with conventional fuel instead of pretending one option solves everything. We avoid plastics where possible, use natural materials that last, and work with nature instead of against it. That means embracing weeds where they serve a purpose, using biodiversity instead of monocultures, and letting natural cycles do the work we once tried to control. I also unpack why large-scale mandates, like the EU’s plan to ban new fossil-fuel cars by 2035, sound good in theory but overlook the realities of infrastructure, materials, and trade-offs. Real change won’t come from legislation alone; it happens when individuals choose differently — when we buy less, waste less, and make each decision with the long view in mind. The goal isn’t perfection, it’s progress: small, sustainable choices that make our lives and our planet better over time.     111: A Future Where We Can Eat At McDonald’s

    A few weeks ago, I found myself driving home late after a long day of hauling gear to our new property — hungry, tired, and joking with Kathy that if we were a “normal” family, we’d just pull into a McDonald’s drive-thru. Of course, we didn’t, but that comment stuck with me. Could there be a future where eating at McDonald’s wouldn’t feel like poisoning your body? It sounds absurd, but after hearing that McDonald’s plans to invest $200 million into regenerative agriculture, I’m not so sure anymore. That idea — the possibility of fast-food giants shifting toward something genuinely sustainable — gives me a sliver of hope. Because most days, it’s hard not to feel discouraged. We’ve learned that frogs in local waterways are showing calcification from chemical exposure, that ibuprofen and microplastics are showing up in tap water, and that airborne microplastics now drift over the Alps. Even the air on mountaintops isn’t clean anymore. When you start connecting those dots, it’s easy to think we’re too far gone.  But then you see small signs of progress: restaurants switching from seed oils to tallow, or major brands talking seriously about soil health, and you realize the tide might actually be turning. Europe tends to rely on top-down regulation to drive change, but here in the U.S., progress starts with individual choices. Businesses respond to demand. Every dollar we spend is a vote for the kind of food system we want. If enough people ask for better meat, for tallow-fried food, for products made without synthetic inputs, the market will adjust. That’s already happening in small pockets, and it’s proof that change doesn’t have to come from policy — it can come from us. We didn’t end up at McDonald’s that night; we stopped at a barbecue joint that fries in tallow instead of seed oils. It wasn’t perfect food, but it was progress (and worth supporting).     110: Why Your Blood Pressure Reading Might Be Totally Wrong!

    When most people think about blood pressure, they think about a once-a-year reading at a doctor’s office. But one measurement on one day doesn’t tell you much about your cardiovascular health. Just like a single fasting glucose number doesn’t reveal your metabolic state, a one-off blood pressure check is largely meaningless. Blood pressure fluctuates throughout the day based on stress, sleep, exercise, hydration, and countless other factors. And even more important: the cuff on your arm measures brachial pressure — not the central pressure your heart and organs actually experience. That distinction matters. The true risk isn’t just the number on a cuff, it’s how elastic your arteries are and how much pressure your aorta is under. Elastic vessels absorb the shock of each heartbeat, while stiff ones reflect it back toward the heart and raise central pressure. That’s why arterial stiffness is such a strong predictor of cardiovascular risk, especially as we age or when diet and lifestyle accelerate inflammation and plaque buildup. In this episode, I explain how modern devices can go beyond a simple systolic/diastolic reading. Using pulse wave analysis, they can estimate central blood pressure, pulse pressure, augmentation pressure, augmentation index, and oxygen supply-demand balance in the heart muscle. I share some of my own readings — including cases where a cuff reading looked “high” but the deeper markers showed excellent elasticity and low central pressure. It’s a reminder that context matters far more than one isolated number. The takeaway is clear: don’t let a single reading define your health. Look at patterns over time. Pay attention to central pressure and vessel elasticity. And above all, address the lifestyle drivers that really move the needle — diet, sleep, movement, stress, and balancing electrolytes like sodium and potassium.     108: Europe vs. America: The Health Secret Nobody Talks About

    I recently spent a week in Austria, bouncing between my grandparents’ farmhouse and the alpine trails I grew up on. And it hit me how stark the contrast is between the foundation they built and the environment kids are growing up in today.  My grandparents are 92 and 93, still living on their own. They had decades of clean food, pure alpine water, long days outside and zero WiFi. And then, over the last 10-20 years, an Americanized creep of seed oils, ultra-processed snacks and glyphosate started showing up in force.  Fortunately, for my grandparents, their health trajectory was already set. But the sad reality is that today’s Austria looks a lot more like the U.S. than the one I left in 2007. You see it in the soda cases and packaged snacks; in childhood obesity, which simply wasn’t common when I was a kid; and in the push for convenience over quality.  On paper, the cardiovascular stats are surprising, with heart issues accounting for about a third of Austrian deaths vs roughly a fifth in the U.S. But context matters. Life expectancy is higher in Austria, smoking remains far more prevalent, alcohol is a daily staple for many, and coding practices differ. And while European rules do more to keep out junk — i.e., no drug ads to consumers, tighter oversight of additives, a precautionary approach — you still find head-scratchers like the EU’s renewed glyphosate approval, and the official dietary guidance in Austria is every bit as misguided as America’s: more grains, less meat, avoid saturated fat.  Meanwhile, the water story flips the other way; Austria’s alpine spring water really is great, while here I won’t drink unfiltered tap water. The throughline I keep coming back to is the environment. Austrians still walk and bike more, take real vacations and spend time outside. But the trend is heading in the wrong direction.  My takeaway for both sides of the Atlantic is the same: don’t wait for guidelines or brands to save you. Vote with your fork and your feet. Buy directly from farmers when you can. Filter your water. Create a home rhythm that makes movement and sunlight normal. Ignore food-industry talking points. And recreate the conditions humans have traditionally thrived in, focusing on better food, cleaner water and more time outside. If that resonates, start small this week. Audit what’s in your pantry, pick one item you can swap for a simpler version, take your next meeting while on a walk, and move dinner earlier so your sleep isn’t collateral damage.     Most people have been told at some point that the way to “detox” is to buy a cleanse, live on juice for a week, or chase down some supplement that promises to pull toxins out of the body. But the reality is very different.  In this episode, I unpack what detoxification really looks like, and explain why your body already comes equipped with everything it needs to keep itself clean — provided you don’t get in its way. How does it work? Instead of imagining the liver as a sponge full of toxins or assuming your kidneys need a crash reset, it helps to understand how these systems actually function.  The liver runs chemical conversions that neutralize harmful compounds and make them easier to excrete, the kidneys filter waste into urine, and the lungs, skin, and gut provide additional routes to push toxins out. From breath to sweat to stool, detox is happening every single day.  The key to efficient detoxification is to limit your exposure to things your body struggles to process — like excessive alcohol, ultra-processed foods, endocrine-disrupting chemicals in plastics and skincare, and antinutrients in plants that place unnecessary stress on the kidneys and gut.  Choosing nutrient-dense animal foods, prioritizing hydration, spending time in the sauna, managing stress, and maintaining quality sleep all give your body the margin it needs to carry out its own repair work.  In other words, when you live in a way that doesn’t constantly overload these systems, detox becomes effortless and ongoing.
