    Why does bread in Europe not bother your gut the way it does in the United States — and what does glyphosate have to do with Hashimoto’s, hypothyroidism, and other serious health conditions? If wheat and dairy trigger inflammation, fatigue, anxiety, or loose stools at home, why can they feel totally fine abroad? In this episode, I share what happened when I recently spent two weeks in Spain and Portugal and ate gluten after being gluten-free for 14 years. Instead of feeling bloated, irritable, and anxious like I normally would after eating gluten, I actually felt completely fine. That’s right — no symptoms whatsoever. You’ve probably heard of others having similar experiences, but the science and history behind why this happens is fascinating. I explain why European wheat is different from U.S. wheat, and how the U.S. food system’s agricultural and dairy practices have created a perfect storm of problems since at least 1996. We’ll get into how glyphosate and other herbicides have infiltrated our food system, plus what the research says about gut bacteria disruption, intestinal permeability, and thyroid/endocrine impacts. There’s also a very real connection between glyphosate and non-Hodgkin lymphoma that has led to hundreds of thousands of lawsuits. Then we talk dairy: why the EU banned synthetic growth hormones, fatty acid profiles (grass-fed vs. grain-fed), and how mold-contaminated feed can contribute to issues that I often see show up in toxin testing. This may all seem like bad news from the U.S. perspective, but there are still things we can do here to protect our health without missing out on the good things in life.     Can genetics explain chronic gut issues, thyroid symptoms, inflammation, and why one person can “eat poorly” and feel fine while another does everything right and still struggles? What if your best diet depends on your genetic carb tolerance, plus things like caffeine and histamine sensitivity? On this episode of the She Talks Health Podcast, I sat down with Dr. Sam Shay to talk about how functional genetics can validate what you’ve probably felt in your body for years and give you a practical roadmap forward. We started things off with Dr. Shay’s story of being really unwell as a child, and how that pushed him to seek out his own information about his health. As a kid, he struggled with things like years of crippling insomnia, violence in school, and developing a caffeine habit at only 6 years old. His desire to find answers about his health struggles led him to specialize in genetics and train other practitioners in this modality. Later, we got into the details of what our genetics really tell us about our health. In this Thyroid Thursday episode, I share what recently happened when my Dad landed in the hospital and ultimately needed open-heart surgery for a triple bypass after doctors found major arterial blockages.
