Ep. 3. Small Island, Big Standards: Fine Dining in Galveston with Denise Vargas

In this episode of Conversations with Kimmy, Kimmy sits down with Denise Vargas to talk about family, hospitality, and the legacy of her father, Paco Vargas — a man who helped raise the bar for dining in Galveston. Denise shares Paco’s story, the restaurants and ideas that helped shape Galveston’s dining scene, and what it was like growing up in a family where hospitality wasn’t just a business — it was a standard. Kimmy and Denise also talk about something they both believe deeply: living on an island or in a smaller town doesn’t mean you have to settle. Whether it’s a beautiful dinner, a great dress, or an elevated experience, Galveston deserves nice things — and businesses like theirs have helped prove there’s an audience for them. It’s a conversation about high expectations, taking risks in a small market, family legacy, and believing Galveston can be both laid-back and really, really good.

We talk about making a major career change, betting on yourself, starting a real estate brokerage, and what he’s learned about building a business and working in Galveston real estate along the way. And because I get to ask the questions, we’re getting into the behind-the-scenes stuff too — working alongside your spouse, raising a family while building businesses, taking risks, navigating entrepreneurship, and figuring out what success actually looks like. Whether you’re in real estate, building a small business, considering a career pivot, or just wondering what it takes to bet on yourself and start something of your own, this conversation is for you.
